  • 5 Minute Chocolate Mug Cake

    5 MINUTE CHOCOLATE MUG CAKE




    4 tablespoons flour
    4 tablespoons sugar
    2 tablespoons cocoa
    1 egg
    3 tablespoons milk
    3 tablespoons oil
    3 tablespoons chocolate chips (optional)
    A small splash of vanilla extract
    1 large coffee mug (MicroSafe)

    Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.



    Pour in the milk and oil and mix well..



    Add the chocolate chips (if using) and vanilla extract, and mix again.
    Put your mug in the microwave and cook for 3 minutes at 1000 watts.



    The cake will rise over the top of the mug, but don't be alarmed!



    Allow to cool a little, and tip out onto a plate if desired.
    EAT ! (this can serve 2 if you want to feel slightly more virtuous).



    And why is this the most dangerous cake recipe in the world?
    Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!

              low carb Minute Muffin
              1 Tablespoon butter
              2 Tablespoons Flax Meal
              2 Tablespoons Almond Flour
              1/2 teaspoon Baking Powder
              Flavorings as desired (today I added a good sprinkle of cinnamon, and a teaspoon of cocoa powder)
              Sweetener to taste (1-2 packets of Splenda or 2 T DaVinci Syrup)

              In a coffee mug, melt butter in the microwave. Add dry ingredients and stir. Add egg and stir. Microwave on high for one minute 30 seconds. The muffin may rise far above the top of the mug, but will fall back a bit. Let cool about one minute and turn out muffin. It may appear too wet, but will dry as it cools. These can be baked in a conventional oven as well, for about 15 minutes. Makes one muffin

              I top it with whippping cream whipped with some Splenda. About 2.5 grams of carbs per muffin.

                I haven't tried this (yet!) but the only potential problem I see is that the mug isnt' greased. YOu might consider mixing the batter in a small bowl and pouring it into a mug that you've lined with cooking spray or somesuch, to facilitate getting the cake onto a plate.

                However, eating it right out of the mug eliminates that concern, and the fairly large amount of oil in the recipe may also render my point moot.

                I'll have to test it and see.

                    I altered the recipe a bit and it turned out really good.

                    I used

                    1/2 Tablespoon of Oil
                    5 Tablespoons of Milk
                    1/2 tablespoon of chocolate syrup

                    Did not use chocolate chips of any kind. Microwaved for 5 minutes in a bowl and topped with chocolate syrup. Was very yummy.

                    Gonna try some other flavors some time. Like maybe butterscotch or peanut butter chips with or without chocolate.

                    EDIT: If you like your cake sweeter then the chocolate chip route is the way to go IMO. Mine with the above was somewhat bland, but the chocolate syrup topping more than made up for it.

                      I simply take a knife and swipe it around the edge of the cup - the muffin comes right out!
