  • Gamers Christmas...

So this year again I'm throwing a christmas party for my gaming group at my house....but have NO clue what I'm going to make for dinner...

I know I'm making a traditional Yule Log for dessert, but I have no clue as to the main dish to feed 10 people....many of whom love to eat alot of food...

Open to ideas....no one has any food alergies or things they don't like.
It is by snark alone I set my mind in motion. It is by the juice of the coffee bean that thoughts acquire 'tude, the lips acquire mouthiness, the glares become a warning.

with creative use of Food dye, you could make a pacman yule log.

Damn, I misread it, serves me right for being up at 5am having not slept.

Low Carb "Mockaroni" with Cheese sauce. The Mock in this dish comes from the cauliflower instead of pasta you put in it. >_> Poof, a vegetable and a side dish taken care of.

      Cauliflower
      1-2 cups shredded cheddar
      4 tablespoons heavy cream
4 tablespoons cream or neufchatel cheese
      Parmesan cheese
      Salt and pepper to taste

Boil up one cauliflower, drain. Into your dish put in half the cream and a handful of cheddar, then throw in the cauliflower. In a microwave safe bowl, nuke the cream cheese, salt and pepper and rest of the cream and 1/2 or so of the cheddar together in 30 second intervals, stirring so it melts and gets smooth. Pour the sauce over the cauliflower, mix, then top with some parmesan and reserve cheddar. Bake for approximately 45 minutes-1 hr or until brown and bubbly.

Delicious, low carb. Everyone will fall over it.

If you'd like, I can give you sweet and sour meatballs or traditional Canadian pork pie.

Well, you can hardly go wrong with lasagna or spaghetti. I have a recipe for a delightful macaroni casserole that feeds a small army if you'd like it. (It involves Velveeta and Rotel as the main ingredients.)

          Okay, Okay! Here's the recipe!

This is really more of a concept than recipe, please feel free to alter, add, or subtract as you wish.

          1 lb ground beef
          1 onion, chopped
          1 bell pepper, chopped
          1-2 stalks of celery, chopped

Brown above in a big pot with salt, pepper, red pepper flakes, and a bit of sugar. Drain excess fat if needed. (That will depend on fat content of beef, of course. If it's 90/10 or better, don't worry 'bout it.)

In seperate pot, boil one small bag of macaroni pasta (any kind of short, funky noodle will do, though, I used Cavatappi last time and it was great!)

Put back in pot and add 1 lb Velveeta, cut into hunks so it'll melt faster. Once the Velveeta melts, add 1 can cream of mushroom soup, 1 can of rotel, and the cooked pasta. You can also add extra green chiles at this point if you want to bump the heat factor a bit.

Pour into a large baking dish and bake uncovered for 25-30 minutes at 350 degrees.

any cream of can be subbed in for shroom. I am not fond of cream of creature soup so I tend to use cream of celery or broccoli or asparagus in casseroles.

There are a lot of good mass feeding recipes out there, but if oyu want to really serve the masses and give ex military flashbacks, how about :

Yeah, probably! Cream of...anything would work. Or maybe just cream. Hell, I don't know!

Oooh, forgot to mention something-if there's snow, fresh snow, you could boil down maple syrup into a sort of taffy and pour it on so it hardens and makes a sort of candy. Really, really good. Geek or not, nothing brings out the kid in anyone more than playing with your food.

2 cups cooked White kidney beans if canned drain and rinse
                          11 cups Beef stock
                          3 teaspoons Oregano
                          2 1/2 teaspoons Pepper
                          5 teaspoons Parsley; (fresh chopped)
                          1 1/2 teaspoon Tabasco sauce
                          6 cups Spaghetti sauce
8 ounces dry ditali or the small shells [well pretty much any little shaped pasta, i just made a batch yesterday with dinosaur pasta] In a pinch, I have used the dried cheese filled tortelloni, but i prefer ditali as the tortelloni tend to unwrap while cooking]

                          Directions:

Preparation: Sauté beef in oil in large 10-qt. pot until beef starts to brown. Add onions, carrots, celery and tomatoes and simmer for about 10 minutes. Drain and rinse beans and add to the pot. Also add beef stock, oregano, pepper, Tabasco, spaghetti sauce, and noodles. Add chopped parsley. Simmer until celery and carrots are tender, about 45 minutes. Makes 9 qts. of soup! **Just cut the recipe in 1/2 for smaller family needs!
