So, my best friend is on a macrobiotic diet because it seems to be helping with her fibromyalgia pain. I am always the one to bake birthday cakes, because I'm pretty good at it. So naturally, I was determined to make a cake that would be in accordance with her diet.
Well, I had to cheat just a little and use powdered sugar in the icing. But everything else was macrobiotic! The cake tasted a little like a muffin, but with the lemon icing it was actually REALLY good.

It's a family joke of my friend's that she always gets a rabbit-themed cake for her birthday. In the past I've done 3D rabbit cakes: this time, I used marzipan to create some little bunny figures and do a Velveteen Rabbit theme.
