what is it. i just googled one. probably bad recipe.

Pancake Batter (serves 6 or so people):
- 2 cups of Self Raising Flour
- 2 cups of milk (I use full cream)
- 2 extra large eggs (~59g each)
- 60g melted butter
- 4 tablespoons of white/caster sugar (I think you'd call it superfine)
Method:
- Sift flour and sugar together
- Start heating the pan and grease it
- Whisk the eggs and milk together
- Gently mix the eggy milk into the flour & sugar
- Stir the butter in and cook immediately (don't worry if the butter makes it lumpy, it will be fine when it's cooked)
It's runny and cooks quickly, when there are lots of bubbles and the edges are slightly set, flip it over and wait a few minutes. They don't get ruined if you check to see if they're cooked. The key is: Don't overmix the batter!
I can't make pancakes that aren't from scratch. In fact, my FIL's pancake recipe (which my husband considers the only worthwhile pancakes) still gives me a hard time. Why? Because with a mix, or with his recipe, you don't mix as if you're making pancakes! You mix until everything is smooth. Horribly confusing. I miss my buckwheat pancakes.
And you're bad influences on me! I went to open the window last night after the light was out. Jackdaw said he was fairly sure he hadn't left any booby traps (it's on his side of the bed). After I got it open I agreed, because they'd stayed in my shirt. (He then had the gall to claim he loved me "despite" my bad puns. He did, however, have the decency to agree with I pointed out that it was because of them.)

mix in a large measuring cup (like the one you measured your milk in) with a fork til combined
pour on hot pan (cast iron, griddle, reg. skillet, cookie sheet whatever!) til edges set, and bubbles stop rising, flip once *** Once pan is hot, reduce heat to low or risk burning***
