    Roasted Carrots with Thyme

    Ingredients:

    2 lbs of baby carrots with stems (multicolored mix is the best) OR bab-cut carrots
    2 tbsp olive oil
    about 6 stems of fresh thyme
    freshly ground black pepper
    kosher or sea salt

    Directions:
    Preheat oven to 375 deg F.
    Place carrots on a large baking tray.
    Remove thyme leaves from stems and add both to carrots (use more thyme if you like).
    Drizzle olive oil over carrots and thyme, then toss with your hands to coat evenly.
    Spread coated carrots and thyme evenly on baking tray.
    Wash your hands with dish soap 'cause they're all oily. :-)
    Season with salt and pepper to taste.
    Roast in oven for 40-60 minutes, tossing carefully every 20 minutes, until cooked to your desired tenderness.
    Don't wanna; not gonna.

    Thyme is my absolute favorite herb. It's good with so many veggies. Love it with carrots. When I roast a batch, I make extra to use in pot pie later.

      I almost made this for Thanksgiving dinner, but I ran out of Olive Oil, and well, we had enough stuff anyways for dinner to be honest.

        Hint: Adding a clove of fresh chopped garlic also gives a great taste. I use to stirfry the carrots in a saucepan.
        A theory states that if anyone discovers exactly what the Universe is for, it will be replaced by something even more bizarre and inexplicable.

        Another theory states that this has already happened.
