I have yet to be in a situation where my bank card took longer than an average cash transaction. From what I have witnessed, cards ring up faster than the time it takes a cashier to put the money in the drawer. Also, even if the cashier counting the cash took exactly the same amount of time waiting on a clearance did, you can still do other things while waiting on clearance, unlike when you're counting cash.
I have literally had situations where I hand my card over, they hand my food over, they hand my card back, and I leave. There's no way cash could ever compete with that.
