Brining is supposed to make it moist and tender, too. I've never tried that. We used to use one of those plastic roasting bags. The food writer here used to claim that would dry it out, but ours never did. The bag holds in the steam (most of it) so the turkey stays moist, and it cooked quickly too. We've had 18 lbs turkeys cook in about three hours in a roasting bag.
