I don't know that you have to have a rabbi present . . . people keep kosher home kitchens.
I do know that animal vs non animal must be kept seperate . . . and a rabbi must "bless" / sacntify - I don't know the correct term - the kitchen on a regular basis.
Hehe, I think you mean that animal and milk products must be kept seperate. A donat being kosher would mean that all ingredients, at all stages, would not have come in contact with neither milk nor meat products (unless the donut is explicitly known to be in one of these categories) and also that the ingredients themselves are not from meat/milk sources.
