I always assumed that 'red meat' meant mammal meat. Beef, mutton, pork, etc. People who said they didn't eat red meat would eat poultry or fish.
(Actually, when I was very little I thought 'red meant' meant meat that was cooked rare.)

I'd say creative way to get around food taboos.
In medieval times duck was considered OK to eat on fasting days, it lives in/on water, right? Not that it mattered much for the peasantry and the serfs, they rarely got meat anyway. During that time pork was considered much more valuable than beef. Pork has a higher fat and thus energy content, cows were used as draught animals and for milking. To fatten a swine you need basically left overs from the tables, that was possible even for poorer people. Even in towns people had swines. Smelly...No trees were killed in the posting of this message.
However, a large number of electrons were terribly inconvenienced.
