I had this happen at work and thought I'd pass it along for anyone else who may benefit from my experience. 
I had a customer come in to the store yesterday with iTouch issues - the computer only recognized her iTouch as a camera so it would only transfer photos over. She couldn't transfer music - or even SEE the iTouch in iTunes.
I looked at her connecting cable and commented on it because it's not a style I see often - Y-shaped. Meaning you plug the ipod into the dock but then you can hook it up to a USB cord OR to a firewire. (or both at the same time).
I have one myself. I bought it in Australia back when I was in the Navy because no one in my workshop had one like it so, no one was going to walk off with it.
But after looking at her issue I remembered... my boyfriend tried using mine with his iTouch and it didn't work. I guess the dock - although it fits - is too old of a style.
I brought this up to the customer and said, "I'll be right back" and went to fetch one of our spare dock cables cos ours are all pretty new.
The result: she still couldn't transfer her music from the itouch to the computer - she'll need to get the original source or find software that will copy. BUT she could finally see the iTouch via iTunes and see the music.
So yes, if you have a y-shaped ipod dock it doesn't work well with itouch devices.
