Two things I'm curious about:
1) Did the guy get his $20.00 back?
2) What would other managers (not servers, since we already know how you feel on this topic) on this board do if encounterd with a similar situation?
Let's be honest here. It isn't nice. Legally the server was supposed to claim this money for taxes (whether she did or not is a separate issue), so this customer is basically screwing her out of the tip as well as the government's cut. The money is gone, I don't think it's right for the server to give it back. If the restaurant chooses to return the money themselves, that's different.

Give him back the $20. BUT, do it with $20 in Dollar Coins. Or Quarters. Or if your REALLY Evil....Pennies. Or even worse, $20 in Canadian Currency.

On top of that, I would expect that the money would have already been spent. I know that when I drive deliveries, a lot of that money either goes into my gas tank, groceries, or the occasional bar trip. I tip 20% for average service. 25% for good, 30% or more for outstanding. I only leave no tip for truly horrific, epic fail service, but thats only happened to me once in my entire life. It was epic fail all around.
Asking for a tip back is just absurd. Incredible balls to do that!
And not in the good way, either! Its ballsy to be that monumentally sucky.

I would say give the guy 20 Zimbabwe dollars, but you can't find a 20 Zim dollar for love or money. (This is an African country who's inflation is at something like 17000% - their money has expiry dates stamped on it!)
That was sucky tho. That's like giving something to charity, and calling them the next day saying "oh, yeah, that food I gave for the starving orphans? I need it back, having a party tonight..."The report button - not just for decoration

I know that if i owned a restaurant.... OK I would've told the guy off in a "nice" way... but if I did offer money... I would've offered a $20 gift certificate or food worth $20. As I'd say "I have no proof you gave $20" and $20 in food isn't $20 in actual money (it might be closer to $5 depending on what it is).

Update:
Apparently Awesome Tipper has been calling about this since Friday night. We finally decided to offer vouchers and fortunately AT was satisfied.
As the server (and somebody here) pointed out, the tips have to be declared, and she can't bloody well just give it back!"Love is not love which alters when it alteration finds..."
Though I am not naturally honest, I am so sometimes by chance.

I had a similar thing happen to me one time. There was a family that ordered pizza from us quite regularly and they always stiffed the driver. I delivered there one night and a different lady came to the door and gave me a check with a three dollar tip. Later that night the woman that lives there came into the store and said that the lady who paid was her sister and she didn't want her paying for the meal so could she buy the check from me. I said sure, so she wrote me a check. I told her she was three dollars short because the other check had a tip. She got all huffy and walked out.

All these posts are making me think my town's full of the "no tipping" people that might request change for the tip left.... I ordered a pizza and stuff the other night (they charge $2 for delivery... now what they use that for/who gets it I have no clue -- used to be for the company delivery vehicle or driver, but they got rid of the company vehicle when the gas prices went up), but I gave the driver about $4 over the total (I just rounded up to $25). Driver's first comment was "I'll go get your change". Which threw me off, I said "it's yours, I figure you have expenses and stuff." He replied "thanks! We do have to pay for our gas again."
But when you give a "small" tip (about 20%), and the driver automatically assumes you want change.... that's kind of sad.

My fiance is a manager for a pizza chain, and was a driver for several years. The delivery charge usually goes towards insurance. A la, if a driver gets in an accident and it comes back to the store somehow, then the store can cover it. This is the general principle in major chains, I think... not sure about your small mom-and-pop type pizza place.
And when I was a server, the "I'll go get your change" was a ploy to get a customer to say, "oh no, that's for you!" Because when they didn't say that, 98% of the time, they were going to give you only a portion of whatever the change was, however minimal it may have been. Which always sucked.
Related to the OP though... I'd tell the guy to shove it, and play dumb like he never gave me more than the originally intended $8. But where I was a server, we all always had pockets full of cash, most of the time having no clue who gave us how much, just knowing what our totals were at the end of the night.I work at Walgreens.
(I'm just tired of mentioning it every time I want to relate to a story.)
