What's the difference between a muffin and a biscuit?

      Yes, American biscuit is close to a scone in texture, maybe a tiny bit more moist. And the gravy is white, milk-based. An "english" muffin (breakfast sandwhich) is a misnomer; it hasn't anything to do with England. I think it's closest cousin would be a crumpet.

          Actually, the closest relation to an English muffin would be... what we call a muffin. Crumpets are similar in size/shape only, texture-wise they're massively different.

            Biscuits, American style, are crispy, flaky, and buttery. Muffins, on the other hand, usually tend to be sweet and moist, often flavored with fruit or sweets, such as chocolate. Muffins also have a distinct look like a large cupcake, along with a moist, denser texture, while biscuits are flat or uneven shaped, depending on whether they're simple drop biscuits or more time intensive layered biscuits. Muffins can be sweet or savory, biscuits, on the other hand, are almost always savory, such as garlic or cheese muffins. Biscuits are properly baked out of white flour, while muffins can be baked from various types of flour, or oats, or other grains.

                To further complicate things slightly, there are actually two kinds of "American" biscuits: rolled biscuits and drop biscuits.

                The drop biscuits are much easier to make, but are crumbly. Rolled biscuits hold together better, and are easier to butter.

                And then there are canned biscuits, which aren't quite like either.

                  When I was a kid, my mother used to make these a lot. She would make a hole in the middle so it looked like a donut, and coat them with powdered sugar. My concern for my waistline (and diabetes) prevents me from making such goodies these days.
